Ingredients

Serves : 12
  • 1 cups all purpose flour


  • 1 tsp baking soda


  • 1/2 tsp baking powder


  • 1 1/2 cups carrots: grated


  • 2 nos eggs


  • 2/3 cups oil


  • 2 tsp vanilla essence


  • 3/4 cups sugar


  • 1 tsp cinnamon powder

Directions

  • Sift together flour,baking powder,baking soda ,carrots and cinnamon in a bowl and mix well. Set aside!
  • In a large mixing bowl, whisk eggs and oil until well combined. Follow by adding sugar and vanilla essence and mix til sugar melts.
  • Now add the flour carrot mix and fold well.
  • Preheat oven to 350 degrees F.
  • Line a muffin tin with cupcake liners. Grease them with oil or butter.
  • Pour the batter into the muffin trays and fill up to 2/3rd of the liners.
  • Bake for 20-22 mins until the muffins have risen and turned golden brown.
  • Allow the cupcakes to cool completely.
